POT ROAST CHICKEN MARYLAND

Serves: 2

 

Ingredients

2 x chicken Maryland

2 carrots diced

1 onion diced

2 red shallots diced

200g Fusilli pasta

200ml tomato paste

1/2 cup dried mushrooms

2 bay-leaves

2 sprigs thyme

500ml Chicken stock

 

Method

Preheat oven to 140 degrees celsius.

Put a large pot over a high heat. Add some cooking oil and fry Marylands on both sides until nicely browned but not cooked through, then remove and set aside.

Add carrots, onion and shallots to the pan and saute, breaking up any brown bits from the chicken on the bottom of the pot.

When vegetables have softened add tomato paste and dry pasta and stir through.

Place chicken Marylands back in the pot on top of vegetables and tomato paste. Then add chicken stock, dried mushrooms and herbs and stir through. 

Put pot in oven at 140 degrees Celsius for 1 hour.
