BANANA HOTCAKES

Ingredients
Hotcakes
1.5 cups Plain flour
1 tsp bicarb soda
pinch salt
1/4 cup sugar
1 egg
1/2 cup milk
25g butter
Sauce
60ml Kalua
1/4 cup brown sugar
pinch salt
1 banana chopped into rounds
Method
Pre-heat oven to 180 degrees Celsius.
Melt butter in a frying pan on medium heat.
Add to a mixing bowl add flour, bicarb, salt, sugar, milk and melted butter and mix together with a knife. It's ok if there are small lumps.
Spoon cake mixture into the pan that was used to melt butter place in oven for 10 minutes, flip hotcake after 10 mins and put back in oven for another 5 mins.
Mix sugar and kalua together in a pan on medium heat until it starts to bubble
add cream and heat through for 3 minutes.
Turn off heat and add banana to the hot sauce and leave on the stove.
Serve hotcakes with plenty of the banana caramel sauce and some cream or vanilla ice-cream.
