SMOKED SCOTCH

Ingredients
800g whole scotch fillet
Glaze
1/2 brown onion diced
Juice of 1 lemon
1/4 cup honey
1/4 cup maple syrup
1/4 cup brown sugar
3cm knob ginger sliced
3 cloves of garlic sliced
1tsp ground coriander
1tsp ground cumin
1 tsp salt
Method
Mix all of the glaze ingredients together in a bowl. Coat whole scotch fillet really well and marinate in the fridge for an hour or ideally overnight.
When ready to cook remove from fridge about 1 hour prior to cooking.
Prepare your smoker so it is not blasting with heat. About 115 – 130 degrees Celsius is ideal. Place scotch fillet in the smoker and sit back and wait. Will be ready between 1 and 4 hours depending how well you like it cooked.
