FLATHEAD TAILS WITH LEMON BUTTER

Ingredients
100g Butter
2 tablespoons capers
2 cloves garlic finely sliced
Zest 1 lemon
Juice of half a lemon
Small bunch chopped parsley
350g flathead tails
Pinch salt
Method
Oil pan on medium heat and fry flathead tails. Should take about 6 mins to cook.
In a small pot over low heat add butter and garlic cook until butter melts and starts to bubble.
then add lemon zest, capers, parsley and stir through keep on low heat for about 5 mins.
Finish with lemon juice and salt to taste.
Serve flathead tails covered with the lemon butter sauce.
