EYE FILLET WITH SAVOURY SAUCE

Serves: 4

 

Ingredients:

4 Eye fillet steaks

Olive Oil for cooking

 

Sauce:

1 red shallot finely diced

1/2 clove garlic finely diced

small bunch mint finely sliced

small bunch coriander finely sliced

1/2 teaspoon chili flakes

1 1/2 teaspoons soy sauce

1 cup cherry tomatoes quartered

1 teaspoon fish sauce

juice 1 lime

2 tablespoons olive oil

2 teaspoons sweet chilli sauce

 

Method

Add all ingredients for the savoury sauce to a bowl and mix well.

To cook the steaks, try and remove the steaks from the fridge at least 1 hour before cooking. coat the steaks in oil. Heat the pan extremely hot and place steak in the pan and press it down. For medium rare - cook 2 minutes on one side, turn and cook for another 2 minutes. Then remove from the pan and rest for 2 minutes. 

After the steaks have rested; slice into strips and top with the savoury sauce.
