BERRY TARTE TATIN

Ingredients

2 cups berries - strawberries, raspberries, blueberries

1 cup Rhubarb stalks roughly chopped

1/2 cup brown sugar

1/4 cup raw sugar

75g butter

2tbs corflour

juice half lime

1 sheet shortcrust pastry

 

Method

Pre-heat oven 180 degrees celsius

Get a frying pan that has a handle that's suitable to cook on a stove and go in an oven

Place the pan face down on the sheet of pastry. Trace around the pan with a knife to cut a circular piece of pastry exactly the size of the top of the pan

Mix berries and rhubarb together with cornflour and lime juice

Add brown sugar and butter to pan on medium heat when butter has melted add raw sugar and stir as the sugar dissolves

Add berry mix to pan

Cover berries with pastry and tuck the sides into the pan. 

Bake in 180 degrees oven for 30 mins 

Turn out onto plate
