SICILIAN CARROTS WITH LENTILS

Serves: 4
Ingredients
4 carrots thinly sliced
1 onion thinly sliced
50ml olive oil
1 clove garlic finely chopped
1/4 cup chopped black olives
1 can brown lentils drained
1 can tomatoes
60ml red wine vinegar
300ml stock
1tsp chilli flakes
1 1/2tsp truffle salt
250g Barilla Red Lentil Pasta
small bunch fresh parsley
150g parmesan grated
Method
Sauté carrots and onions in the pan with olive oil until soft
Add garlic, olives, lentils, tomatoes, vinegar, stock, and pasta cook on low heat for approximately 10 mins until the pasta is al-dente.
Take off the heat and add truffle salt and serve into bowls before finishing with grated parmesan and fresh parsley
