NOODLE POTS

Ingredients

250g Rice noodles pre-cooked

100g shimeji mushrooms

1 cup shitake mushrooms finely sliced

100g dried mushrooms

1tsp grated ginger

2 tbs miso paste

2 tbs soy sauce

small bunch coriander

small bunch bok choy leaves

5 x spring onions chopped

1 long red chilli finely chopped

 

 

Method

Put cooked cold noodles in the jar then layer ingredients starting with mushrooms, then ginger, miso, soy sauce followed by greens including coriander, bok choi and spring  onions then finish with the red chilli.

When ready to serve add boiling water to pots and gently stir for the miso to mix through, allow 5 mins before eating.
