Ingredients

1 pack OEP tortillas

300ml cooking oil

2 eggs

 

Salsa:

1 punnet cherry tomatoes cut into quarters

1/2 red onion finely diced for salsa

1/2 red onion sliced for beans

1/2 clove garlic finely diced for salsa

1/2 clove garlic finely diced for beans

1 bunch coriander leaves roughly chopped

Beans:

1 jalepeno chilli- seeds removed and sliced

1 can OEP black beans

1 cup chicken stock

juice of 1/2 lime for salsa

juice of 1/2 lime for beans

1tbs olive oil

 

 

 

Method

Cut tortillas into triangles.

Fry in hot oil until they are crispy.

Remove from oil onto paper towel.

Strain beans from can and add to pot with stock and 1/2 red onion. Put on low heat and braise for 10 mins

Fry egg in pan

Mix together salsa ingredients, squeeze lime juice and mix through with olive oil.

 

Assemble tortilla triangles on a plate

Spoon beans on top

Then top with fried egg

Finish with the salsa mix
