MOJITO CAKE

Ingredients

 

Cake

3/4 cup Desiccated coconut

125g butter

1 cup

3 eggs

1/2 cup milk

1 1/4 cup SR flour

pinch salt

 

Sugar syrup

3/4 cup sugar

3/4 cup water

1 tsp vanilla extract

60ml white rum

juice of 2 limes

bunch mint leaves

 

To serve:

1 cup fresh mixed berries

 

 

Method

Pre-heat oven 180 degrees celsius

cream butter and sugar, add eggs and mix then add milk

Fold in coconut, then flour then pinch salt

Pour cake batter into a greased cake tin

Bake for 35 minutes

 

In a pot add sugar, water, vanilla, white rum and boil lightly until sugar dissolves. Add juice and bring back to boil stirring occasionally. Take off heat and add mint leaves and leave to steep until cake is ready. 

 

When cake is ready use a skewer to poke holes all over the top of the cake. Place cake on serving plate and pour sugar syrup over the top of the cake and allow syrup to soak in. To serve top cake with chopped berries and a dollop of cream
