FRENCH TOAST


PREP TIME: 10 minutes
COOK TIME: 15 minutes
SERVES: 2

INGREDIENTS

French Toast

2 Eggs

1 cup milk

1 cup icing sugar

2 thick slices sourdough bread

2 tablespoons demerara sugar

50g butter

Topping:

½ cup honey

Juice of ½ lemon

¼ cup chopped dates.

2 tablespoons ricotta cheese


METHOD

Step 1

Mix together eggs, milk and icing sugar. Soak the slices of bread in the egg mix for about 5 minutes, flipping them after 2 minutes.

Step 2 

Heat a frying pan and melt butter. Fry French toast until each side is golden brown. To finish sprinkle the demerara sugar on top.

Step 3 

Add honey to a pot and heat until it bubbles and starts to smell like caramel. Take off the heat and add lemon juice and dates and stir through.

Step 4

To serve spread a generous amount of ricotta on the French toast and pour over the honey/date sauce.
