FRENCH TOAST

INGREDIENTS

4–6 free-range eggs

8 slices of bread

2 cups milk

2 tablespoons maple syrup

6 tablespoons ricotta cheese, plus extra to serve

125 g mixed berries (blackberries, blueberries, strawberries, raspberries)

2 teaspoons icing sugar

8 mint leaves

4 tablespoons maple syrup, plus extra to serve

Butter for cooking

METHOD

Step 1 

In a large mixing bowl, whisk together the icing sugar, 2 tablespoons of maple syrup, ricotta, eggs, and milk until fully combined.

Step 2

Soak the bread in the custard mixture, ensuring each slice is fully coated. Heat a large griddle pan over high heat and add enough butter to coat the pan. Cook the soaked bread for 4-5 minutes on each side, or until golden brown. Once cooked, transfer the French toast to an oven preheated to 180°C and bake for 10-12 minutes to ensure it’s fully cooked through. Repeat this process for the remaining bread.

Step 3

While the French toast is in the oven, combine the 4 tablespoons of maple syrup, berries, and mint leaves in a medium mixing bowl. Gently mix until the berries release some of their juices.

Step 4

To plate up, place two slices of French toast on each plate. Spread some ricotta over the top, then spoon the berry mixture over the ricotta. Serve with extra maple syrup on the side if desired.
