GREEK LARB

INGREDIENTS
750g lamb mince
2 red onions, finely diced
1 Lebanese cucumber, deseeded and finely diced
3 tsp sumac
Juice of ½ lemon
2 tsp chilli flakes
2 tsp ground cumin
2 tsp ground coriander
2 cloves garlic, thinly sliced
3 tbsp coriander leaves, chopped
2/3 cup Greek yoghurt (reserve 2 tbsp for dressing)
METHOD
Step 1
In a cold pan, add the lamb mince and bring the heat up to high. Cook the mince, allowing the fat to render out. Once the lamb is almost fully cooked, add the ground coriander, cumin, chilli flakes, and sumac. Stir well to combine.
Step 2
Once the spices are fragrant, mix in the garlic, onion, and chopped coriander. Cook until the onion and garlic are softened. Stir through the diced cucumber and Greek yoghurt (leaving 2 tbsp aside for the dressing).
Step 3
Mix the reserved Greek yoghurt with the lemon juice to create a tangy dressing.
Step 4
Serve the lamb mixture in bowls and drizzle with the yoghurt dressing. Alternatively, spoon the mixture into lettuce cups and serve platter-style for a shared meal.
