GREEK SALAD

Ingredients
Salad
1 small cucumber, halved, de-seeded and sliced
1 small red capsicum, de-seeded and diced
1 small red onion halved and thinly sliced
½ cup pitted kalamata olives
½ cup cherry tomatoes halved
150g block of fetta crumbled by hand into small pieces
Dressing:
Juice of 1 lemon
½ cup olive oil
Pinch salt
2 teaspoons dried oregano
Method
Mix all the salad ingredients in a salad bowl. It’s ok if the fetta has a lot of crumbs as this will add to the dressing.
Mix all the dressing ingredients in a small mixing bowl or jar. Only dress the salad just before you are ready to serve.
