ROASTED GRAPES AND HALLOUMI

Ingredients
2 cups crimson grapes, washed with stalks removed
200g halloumi cut into strips 1cm thick x 2cm wide
2 tablespoons honey
2 tablespoons sherry vinegar
2 tablespoons olive oil
Pinch salt
Juice of 1 lemon
Method
In a baking dish mix grapes, honey, vinegar, olive oil. Bake for 30 minutes at 160 degrees Celsius.
In a frying pan on medium heat add some olive oil and fry the halloumi so it has a golden brown crust on both sides.
When the grapes are ready, remove from oven and stir through the lemon juice in the pan.
To serve assemble halloumi on the plate and top with grapes making sure to pour all of the beautiful sauce that would have accumulated in the pan.
