HONEYCOMB

SERVES 2-4

INGREDIENTS

1 cup caster sugar

2 tsp baking soda

¼ cup water

2 tbsp honey

Pinch of salt (to finish)

METHOD

Step 1 

In a medium-sized saucepan, combine the caster sugar and water. Heat gently over medium heat, stirring occasionally, until the sugar dissolves. Increase the heat slightly and cook without stirring until the mixture turns golden and caramelises.

Step 2

Once the caramel is ready, carefully stir in the honey until fully incorporated. Work quickly and add the baking soda, stirring vigorously. The mixture will foam up rapidly to create the honeycomb.

Step 3

Pour the honeycomb mixture into a non-stick baking tray or a tray lined with baking paper. Spread it out slightly if needed, but avoid overworking it as this can deflate the bubbles.

Step 4

Allow the honeycomb to cool and set completely. Once set, sprinkle a pinch of salt over the top for a flavour boost. Break the honeycomb into chunks and serve.
