HOT SMOKED SALMON SALAD


PREP TIME 30 minutes
COOK TIME 15 minutes
SERVES 4

INGREDIENTS

150g Of Hot Smoked Huon Salmon, flaked

2 hardboiled eggs, halved

4 rashers of streaky bacon

1 cos lettuce cut into wedges

4 asparagus spears, sliced

4 slices of sourdough, charred and chopped into large croutons

Dressing

3 tablespoons of horseradish

1 cup of sour cream

¼ of a cup of baby capers

¼ of a bunch of parsley, chopped

5 gherkins, diced

1 shallot, finely diced

Juice of 1 lemon

Salt to season

 

METHOD

Step 1

 

To make the dressing mix all the dressing ingredients until well combined

 

Step 2

 

Combine all the salad ingredients together in a large bowl and dress with the horseradish dressing
