PULLED MEAT WITH RICE AND LIME SOUR CREAM

Cook time: 2.5 hours

Serves: 2

INGREDIENTS

Pulled beef

2 gravy beef steaks

1 onion

3 garlic cloves, finely sliced

2 limes

500 ml beef stock

30g packet Old El Paso Pulled Meat Spice Mix 

Mexican rice

½ red capsicum, diced

2 shallots, diced

2 garlic cloves, diced

355 g packet Old El Paso Mexican Rice Kit

Lime sour cream

½ cup sour cream

Juice 2 limes

1 tablespoon fresh coriander, chopped

Pinch of salt

METHOD

Step 1

Heat a tablespoon of oil in the base of a pressure cooker

Sauté the onion and garlic add the beef and brown each side

Add the Pull Meat Spice Mix and beef stock

Put the lid on the pressure cooker and cook for 1 hour
(If you don’t have a pressure cooker use a pan with a lid and simmer for 2 hours)

Remove the lid and continue to cook for ½ hour to reduce the liquid

Turn the heat off

Step 2

Remove the beef and shred it by pulling it apart with two forks

Return the beef to the pan

Step 3

Heat a tablespoon of olive oil in a frypan

Cook the capsicum, shallots, garlic and salt for 2 minutes

Add the Mexican Rice Mix and cook for 15 minutes

Step 4

Mix the lime sour cream ingredients together in a small bowl

Step 5

Spoon the rice into a serving dish

Place the beef on top and spoon the lime sour cream over

Garnish with fresh coriander
