JAPANESE-STYLE CHICKEN

COOK TIME 20-25 minutes
SERVES 2

INGREDIENTS

2 chicken breasts

2 tbsp tamari soy sauce

3 tbsp mirin

600ml chicken stock

METHOD

Step 1 

Heat a large sauté pan over medium heat and sear the chicken breasts on both sides until golden. Add the tamari soy sauce, mirin, and chicken stock to the pan. Simmer the chicken in the liquid, allowing it to cook through while the broth reduces slightly. Once the chicken is cooked, remove it from the pan and let it rest.

Step 2

Continue simmering the broth in the pan for 2-3 minutes. Skim off any foam or impurities that rise to the surface to create a clearer broth.

Step 3

Once rested, slice the chicken breasts into even pieces. Place the sliced chicken into serving bowls. Pour the warm broth over the chicken and serve immediately.
