LOBSTER GUACOMOLE


PREP TIME: 10 minutes
COOK TIME: 5 minutes
SERVES: 2-4

INGREDIENTS

1 lobster tail, roughly chopped
Pukara olive oil
Tasman sea salt
2 avocados, diced
1 lime, juice
½ lemon, juice
½ red chilli, sliced
1 red onion, diced
1 tomato, diced
½ bunch coriander, roughly chopped
1 packet Old El Paso blue corn chips

METHOD

Step 1
Place lobster into an oiled pan with a pinch of salt and cook for approx 1 minute.

Step 2
Place avocado into a bowl with lime and lemon juice and a pinch of salt and mix together.

Step 3
Add chilli, onion, tomato, coriander and lobster and stir together before serving up with blue corn chips.
