LOBSTER SAMBO

Ingredients
4 brioche buns
½ cup sour cream
2 tablespoons gherkins finely diced
Zest 1 lemon
1 teaspoon baby capers
Meat of 1 medium Tasmanian rock lobster chopped
Juice of ½ lemon
Pinch salt
1 small cos lettuce finely sliced
Method
Halve the brioche buns and place on a hotplate to toast for about 5 minutes
In a mixing bowl mix together sour cream, gherkins, lemon zest, capers, lemon juice and salt. Add lobster meat and stir through.
To assemble spoon a generous amount of the lobster mix on the brioche top with lettuce and enjoy.
