MACADAMIA CRUMBLE WITH GREENS AND SALMON


PREP TIME: 15 minutes

COOK TIME: 45 minutes

SERVES: 2

 

INGREDIENTS

MACADAMIA CRUMB

750 g salted macadamias

75 g corn chips

4 slices of sourdough bread

¼ cup of truffle oil

1 teaspoon of salt

 

SALMON PORTIONS

250 g Huon Premium Fresh Salmon Portions Skin On

1 tablespoon oil

Pinch salt

 

GREENS

10 green beans, washed and tips removed

6 asparagus spears

6 broccolini stalks

 

METHOD

Step 1

Place the macadamias into a baking dish

Cover with corn chips

Break up sourdough slices into chunks and place on top of the corn chips

Sprinkle with salt

Drizzle the truffle oil over the top

Bake in the oven for 30 to 45 minutes until it is golden brown and the sourdough is dry

 

Step 2

Place the macadamia mix into a food processor and blitz until you have crumbs

Tip into a bowl

 

Step 3

Add oil to a frypan on medium heat

Add the fish, skin side down and cook until the skin is crispy and the flesh is almost cooked, then turn over and cook for 1 minute

Remove from the heat

Rest for 2 minutes

 

Step 4

Steam the green beans, asparagus and broccolini for 2 to 3 minutes

 

Step 5

Place the greens in a pile on the serving plate

Sprinkle the macadamia crumb mixture over the greens

Serve with the salmon fillets, sprinkled with salt
