ASIAN CHILLI JAM


PREP TIME: 20 minutes

COOK TIME: 20 minutes

SERVES: 2

 

INGREDIENTS

1 brown onion, diced

2 shallots, diced

2 tablespoons olive oil

3 garlic cloves, finely chopped

2 cm ginger, finely chopped

5 red chillies, chopped (seeds in)

½ punnet cherry tomatoes, chopped

200 g brown sugar

1 tablespoon fish sauce

40 ml vinegar

Juice 1 lemon

2 teaspoons thyme leaves

 

METHOD

Step 1

Heat the olive oil in a saucepan

Add the onion and shallots and sauté over a medium heat until translucent

 

Step 2

Add all other jam ingredients stir and bring to the boil

Reduce heat and cook until it reaches a jam consistency

Remove from the heat

 

Step 3

Spoon into a sterilised jar and seal with a lid

Once the jam is cool, store in the refrigerator

Chilli jam can be served with cheese and BBQ meats and goes wonderfully well with Salmon
