PEKING DUCK WITH TOMATO SALSA

INGREDIENTS
PEKING DUCK
360 g Luv-a-duck Peking Flavoured Duck Breasts
TOMATO SALAD
10 cherry tomatoes (a mix of black Russian and red), chopped into quarters
4 spring onions, sliced diagonally into 1 cm pieces
Pinch of salt
DRESSING
1 chorizo sausage, chopped into rounds
¼ cup of oil
Pinch salt
2 cloves garlic, chopped finely
1 handful of parsley, chopped
1 tablespoon sauce from the Peking chicken
1 tablespoon soy sauce
METHOD
Step 1
Heat oven to 190 degrees Celsius
Line a slice pan with baking paper
Step 2
Place duck breasts into the lined slice pan and bake for 10 to 15 minutes, skin side up
Step 3
Add the chopped chorizo and oil to a frypan and cook over a low heat for 10 to 15 minutes
Remove from the heat
Step 4
Add the garlic and Peking duck sauce to the chorizo pan and stir through allowing the garlic to infuse into the still-hot oil
Add 1 tablespoon of soy sauce
Step 5
Remove the duck breasts from the oven, rest for 5 minutes and then cut into thick slices
Step 6
Place the tomatoes, spring onions, parsley and salt into a bowl
Add the cooled chorizo, oil and garlic to the salad
Step 7
To serve, place the salad onto a plate and top with the Peking duck breast and a drizzle of the oil from the salad
