MADEIRA CAKE


PREP TIME: 10 minutes

COOK TIME: 35 minutes

SERVES: 5

 

INGREDIENTS

170 g softened butter

½ cup sugar

3 eggs

¾ cup almond meal

1 ½ teaspoons vanilla

1 cup plain flour

1 ½ teaspoons baking powder

 

 

METHOD

Step 1

Heat oven to 170 degrees  Celsius

Grease a loaf tin, or line with baking paper

 

Step 2

Beat the butter and sugar with an electric mixer until light and fluffy

Add eggs and continue to mix

Fold through the almond meal and vanilla with a spatula

Fold in the flour and baking powder

If you are making a flavoured cake, such as blueberry or banana, add those ingredients to the cake at this stage and fold through.

 

Step 3

Place your cake mixture into the prepared loaf tin

Bake in the oven for around 35 minutes, until the cake is golden on top and a skewer inserted into the cake comes out clean.
