MALT AND ALMOND CHOCOLATE BROWNIES

Ingredients:
250g butter
180g dark chocolate
90g milk chocolate
4 eggs
270g brown sugar
150g almonds roughly chopped
70g malt milk powder
70g cocoa nibs
1 1/2 cups plain flour
Method
Preheat oven to 180 degrees Celsius
create a double boiler with a pot of water on the stove with a metal or glass bowl sitting on top but not touching the water below. The water should be on a gentle simmer.
Add chocolates and butter to the bowl and stir as it melts together. When all chocolate and butter is combined remove bowl from the double boiler and rest for 4 minutes to cool slightly. Then break the eggs into the mix and stir through one at a time.
Add brown sugar, malt powder, cocoa nibs and stir well.
Add flour and fold through the chocolate mix. Don't overwork the flour just mix through.
Pour mix into a lined and greased baking tray bake for 40 minutes.
Can be served hot or leave to cool and serve with a cup of tea.
