MEDITERRANEAN LAMB SALAD

Ingredients
2 lamb backstraps
1 red onion, chopped
1 sweet potato, chopped
1 chorizo sausage, chopped
Dressing
Juice of 1 lemon
¼ cup olive oil
Pinch of salt
To serve
20 g Ashgrove Fetta cheese, crumbled
1 tablespoon parsley, chopped
Pinch of salt
Method
Step 1
Heat oven to 185 degrees Celsius
Step 2
Place the onion, sweet potato and chorizo on a baking tray
Drizzle with olive oil and season with salt
Bake in the oven for 30 minutes
Step 3
Mix the dressing ingredients together in a small bowl
Step 4
Heat a tablespoon of olive oil in a frypan
Cook the backstrap in the frypan for 6 minutes, then rest for 3 minutes
Step 5
Remove the baking tray from the oven
Pour the dressing over the top of the vegetables and chorizo in the baking tray and gently mix through
Step 6
Place a serving of vegetables and chorizo on a plate
Slice the lamb strap into 1 cm strips
Place the lamb on top of the vegetables and drizzle with a little dressing from the pan
Sprinkle with a pinch of salt and a sprig of parsley to serve
