NAN’S SCONES


PREP TIME 18 minutes

MAKES 8 Scones

INGREDIENTS

2 cups self-raising flour, plus extra for dusting

2 teaspoons baking powder

2 teaspoons salt

50g cold butter, diced

150ml milk

1 egg

Double cream, to serve

Jam of your choice, to serve

METHOD

Step 1 

In a large mixing bowl, combine the flour, baking powder, and salt, stirring together with a butter knife. Add the cold butter and, using just your fingertips, rub it into the flour mixture until it resembles breadcrumbs. Add the milk and egg, then use the butter knife to cut through the mixture until it begins to come together. Transfer the dough onto a floured surface and gently knead until smooth.

Step 2

Press the dough out to about 1.5 cm (½ inch) thick, and use a round cutter to cut out scones. Place them on a baking tray lined with baking paper. Bake in a preheated oven at 210°C for 12-15 minutes, until risen and golden.

Step 3

Serve the scones warm with a generous spread of jam and a dollop of double cream. Enjoy with a cup of tea for the full experience!
