Ingredients:
Soy and Black Vinegar
6 x fresh oysters
½ shallot finely diced
1 teaspoon soy sauce
1 teaspoon black vinegar
3 drops sesame oil
½ teaspoon black sesame seeds
Bloody Mary Dressing
6 x fresh oysters
½ shallot finely diced
½ teaspoon tomato paste
½ teaspoon horseradish
½ teaspoon sherry vinegar
½ teaspoon soy sauce
½ teaspoon vodka
Pinch sumac
2 teaspoons finely diced chives
1 tablespoon finely diced tomato (seeds removed)
½ teaspoon celery salt
Method
For soy and black vinegar mix all ingredients in a bowl and evenly divide the dressing on the oysters.
For bloody mary dressing combine all ingredients except for celery salt in a bowl and divide evenly between oysters, to serve add a small pinch of celery salt to each oyster
