OYSTERS BEURRE BLANC

Ingredients

Soy and Black Vinegar

12 x fresh oysters

2 small shallots finely diced

1 cup dry white wine

2 tablespoons finely chopped spring onions

75g cold butter

1 tablespoon cream

Pinch salt

1 tablespoon finely chopped chives

 

Method

Add shallots to a pan on medium heat with wine and simmer until it reduces by ¾

Add spring onions and stir through

Add the butter straight from the fridge gradually 10g at a time stirring through over medium heat. When all the butter is incorporated add the cream and stir through. Season with salt and then remove from heat and add the chives.

Divide dressing evenly between oysters and serve.
