PACIFIC OYSTERS WITH SEA TREASURE


PREP TIME 10-15 minutes
SERVES 3-4

INGREDIENTS

12 fresh Pacific oysters

12 scallops (roe and muscle removed, halved)

Ginger Vinaigrette

100 ml rice vinegar

100 g sugar syrup

1 tablespoon finely chopped chives

4 cm piece of dried kombu

2 teaspoons finely grated ginger

Lemon wedges, to serve

METHOD

Step 1 

In a small bowl, mix together the rice vinegar, sugar syrup, chives, kombu, and grated ginger to make the vinaigrette. Pour half of this dressing over the halved scallops and let them marinate for about 5 minutes.

Step 2

To serve, place two scallop halves on top of each oyster shell. Drizzle over the remaining vinaigrette and serve immediately with fresh lemon wedges on the side. Enjoy!
