PESTO CHICKEN SKEWERS


PREP TIME: 5 minutes
COOK TIME: 10 minutes
SERVES: 1-2

INGREDIENTS

3 chicken thighs, cut into cubes
150g Barilla pesto genovese
½ lemon, juice
1 cup rice, precooked

METHOD

Step 1
Marinate chicken thighs in a bowl of pesto.

Step 2
Once chicken is marinated, place onto skewers.

Step 3
Place chicken skewers onto a hot grill with a squeeze of lemon juice on top before leaving to cook for approx 2-3 minutes on each side until cooked.

Step 4
Once chicken is cooked, serve on top of rice.
