PORK CURRY

Cook time: 90 minutes

Serves: 4

 

Ingredients:

500g Pork Belly cut into bite sized cubes

3 star anise

1 cinnamon quill

1 can coconut milk

 

Curry Paste:

1 red onion roughly chopped

2 long red chillies roughly chopped (remove seeds if you don't like heat)

2 cloves garlic

2cm piece of ginger roughly chopped

1 tablespoon tamarind paste

1 teaspoon ground corander

1/2 teaspoon fennel seeds

1 teaspoon mustard seeds

1 teaspoon ground cardamom

1 teaspoon allspice

pinch salt

2 tablespoons sunflower oil

 

 

Method

Place curry paste ingredients into a food processor and blitz together into a paste

In a large pot add the pork belly and turn on the heat, cook for 5 minutes and then add curry paste, star anise and cinnamon, stir through and cook for another 4 minutes. Then add coconut milk and simmer for 90 minutes

Serve with steamed rice
