POTATO BAKE
PREP TIME: 5 minutes
COOK TIME: 1 hour
SERVES: 3-4
INGREDIENTS
7 washed potatoes
150g speck, cut into battens
1 round brie cheese, roughly parted
4 sprigs thyme, finely chopped
250ml crème fraiche
3 cloves garlic, roughly chopped
1 cup white wine
4 slices prosciutto
1 small truffle, finely chopped
2 spring onions, sliced
METHOD
Step 1
Preheat oven to 180 degrees. Place potatoes into a pot of boiling water and leave to cook.
Step 2
Place speck into a hot pan and leave for a few minutes before adding in garlic and leaving until some of the fat is rendered.
Step 3
Add in white wine and reduce by half before adding spring onion, thyme, crème fraiche and truffle.
Step 4
Once potatoes are cooked, chop in half and place into a bowl and mix together with sauce and leave to sit for a few minutes.
Step 5
After a few minutes place potatoes into a roasting tray and add prosciutto and brie cheese on top before placing into the oven for approx 30-40 minutes.
