MUSHROOM WITH ANCHOVIES


PREP TIME: 15 minutes

COOK TIME: 30 minutes

SERVES: 2

 

INGREDIENTS

2 cups cup mushrooms roughly chopped
5 anchovy fillets very finely chopped
50g Ashgrove herb and garlic butter
2 cloves finely sliced garlic
1 tablespoon olive oil
2 tablespoon chives – finely chopped
Juice of ½ lemon
 

METHOD

Step 1

On a chopping board mash together the chopped anchovies and herbed butter.

Step 2 

Add mushrooms with a large pinch of salt into a pan on medium heat, add anchovy butter and olive oil and sauté for 10 minutes. Finish with chives and lemon juice and serve either on their own or mixed through pappardelle pasta or with a side of sourdough toast.
