ROASTED TOMATOES

COOK TIME: 50 minutes

INGREDIENTS

1kg assorted tomatoes, roughly chopped
4 shallots, roughly chopped
1 red onion, roughly chopped
1 red chilli, roughly chopped
1 garlic, roughly chopped
½ lemon, juice
1 pinch Tasman sea salt
1 pinch pepper

METHOD

Step 1
Preheat oven to 160ºC. Place tomatoes, shallots, onion, chilli and garlic onto a roasting tray with lemon juice, salt and pepper.

Step 2
Place roasting tray into oven and cook for approx 45 minutes.
