SALMON WITH NASTURTIUM OIL (PJ’S DISH)


PREP TIME: 10 minutes
COOK TIME: 25 minutes
SERVES: 2

INGREDIENTS

3 cups Nasturtium Leaves rinsed well

400g Sashimi grade Huon Salmon

Bowl of ice water

¼ cup olive oil

1 medium shallot finely diced

1 lemon for juice

METHOD

Step 1

Add nasturtium leaves to a pot of boiling water. Turn heat off immediately. Allow to wilt for 30 seconds and the scoop out and move immediately into a bowl of ice water allow to sit and cool for 2 minutes then remove onto a clean tea towel to dry.

Step 2

Add nasturtium leaves to a food processor with olive oil and blitz well. Then strain oil through a colander lined with paper towel.

Step 3

Slice salmon with one clean cut per slice. Place desired serving onto a plate and squeeze a small amount of lemon juice on each slice of salmon. Spoon a small amount of diced shallot onto the salmon pieces and then finally drizzle the nasturtium oil over the top.
