Ingredients
2 cups SR flour plus extra for dusting
1tsp baking powder
1tsp salt
35g butter
1 large egg
1/2 cup milk
Method
Pre-heat oven to 180 degrees.
Mix 1.5cup of flour, baking powder and salt together in a bowl.
Add butter and with your hands rub it into the flour until the mix resembles breadcrumbs.
Make a well in the middle of the mix and add egg and milk. Use a knife to mix all ingredients together, try not to overwork the batter to keep the scones light and fluffy. The mix will be slightly wet, when all is incorporated add the other 1/2 cup of flour.
Dust flour on a bench and turn out the dough onto the bench and gently knead the dough so it comes together nicely.
Then work the dough so that it flattens to about 2.5 cm thick, sprinkle some flour on top.
Put some flour on the lip of a glass and use the glass to cut out the scones. gently knead the remaining dough and repeat.
Place on a baking tray lined with baking paper.
Bake for 15 minutes until golden.
To test if the scone is ready remove from the oven and flick your finger on the bottom of the scone. It should sound hollow.
Serve with jam and cream.
