SMOKED SALMON PASTA

Serves: 2

Ingredients

125g Barilla Chickpea Cassarece

1 shallot finely diced

1 clove garlic finely sliced

2tbs olive oil

1/2 cup white wine

2 tbs creme fraiche

1 tbs capers

Juice of half a lemon

1 pack of Huon Wood Smoked Salmon

Method

Heat a large pot of well salted water ready for Pasta. When its boiling add the cassarece and cook as per packet instructions

In a pan on medium/high heat add olive oil, shallot and garlic and simmer with a pinch of salt

When shallot is translucent add wine and simmer until the liquid reduces by half

Add creme fraiche and capers and simmer

Add lemon juice and salt to taste

When pasta is ready spoon it from the pot to the pan with the sauce and stir through. Turn the heat back on and simmer then add smoked salmon broken into large chunks

To serve sprinkle a few more capers and some fresh herbs like fennel fronds or dill
