PRAWN RILLETTE WITH CAVIAR

Ingredients
6 cooked king prawns, peeled, deveined and chopped finely
1 x shallot finely diced
Bunch dill, chopped
Zest and juice of 1 lemon
¼ cup mascarpone
1 French baguette
Olive oil
1 jar Huon Reserve Selection Salmon Caviar
Method
Mix together prawns, mascarpone, lemon juice and zest, dill
Slice baguette diagonally approximately 1cm thick slices
Drizzle olive oil on bread slices and toast on a griddle pan
Serve toast sliced with the prawn mixture topped with ½ tsp of caviar per slice and a sprig of dill
