STRAWBERRIES AND CREAM TART

INGREDIENTS
1 sheet puff pastry
1 punnet of strawberries, hulled
125 g ricotta cheese
100 ml thickened cream
2 teaspoons icing sugar, plus extra for dusting
Fresh mint leaves, for garnish
METHOD
Step 1
Preheat your oven to 200°C (fan-forced). Lay the puff pastry sheet on a lined baking tray. Place a smaller, heavy baking dish in the centre of the pastry (this keeps the middle flat while the edges puff up). Pop it in the oven for about 10 minutes, or until the pastry is puffed and golden brown. Take it out and let it cool down a bit.
Step 2
While the pastry is cooling, whip together the ricotta, thickened cream, and 2 teaspoons of icing sugar until smooth and fluffy.
Step 3
Once the pastry is cool to the touch, spread the creamy ricotta mixture evenly over the tart base. Arrange the strawberries on top, standing them up with the pointy ends facing upwards. Dust with a little extra icing sugar and scatter over some fresh mint leaves. Enjoy your beautiful, summery tart!
