3 CHEESE TORTELLINI

Ingredients
1 Bag of Barilla Tortellini
1 long red chili (remove seeds if you don’t like heat)
1/3 cup Olive Oil
1 long red chilli finely sliced
2 cloves garlic finely sliced
Juice of ½ a lemon
Small bunch fresh parsley finely sliced
Method
Cook pasta as per packet instructions
Add olive oil to a frying pan on medium heat and gently fry garlic and chili, don’t have the heat too high because you do not want to brown the garlic, the goal is to infuse the oil with the flavour.
When tortellini is cooked, pour the oil, chili and garlic into a large bowl then add the tortellini with a splash of the pasta water and mix well. Add the lemon juice and parsley and stir through. Serve with a sprinkling of grated parmesan.
