MUSHROOM LINGUINI

Ingredients
220g Barilla Linguini
1 cup Shitake mushrooms - chopped
1 cup Button mushrooms - chopped
2 cups Swiss brown mushrooms - chopped
2 cloves garlic finely sliced
60g butter
200ml white wine
1 cup cream
1 teaspoon of fresh thyme finely chopped
Handful basic finely chopped
Handful of parsley finely chopped
Method
Cook pasta as per packet instructions
Add mushrooms, garlic and butter to a medium/hot pan and cook for 10 minutes stirring regularly. Add the wine and continue cooking for another 10 minutes until the liquid has reduced by at least half. At cream and simmer for another minute and turn the heat off and then add the chopped herbs at the end.
Mix the pasta with the mushrooms sauce, include some of the pasta water.
