APRICOT PIE

Ingredients

1 x 800g can of apricots with

30ml of the syrup from apricot can

60ml gin

1 tablespoon Arrowroot

1/4 cup Hazelnut meal

1tsp vanilla extract

pinch salt

1 sheet short-crust pastry

1 egg

1/4 cup brown sugar

 

Method

Mix together apricots, syrup gin, hazelnut meal, arrowroot, vanilla salt together in a bowl then spoon into a pie dish.

Cut pastry into strips and weave them into a lattice over the apricot mix.

Whisk egg and use a pastry brush to brush egg over the pastry.

Coat top of pastry with a generous sprinkling of brown sugar.

Bake in oven at 180 degrees for 40 mins or until top is golden.

Serve with cream or vanilla ice-cream.
