ASIAN SAVOURY MINCE

INGREDIENTS
2 tbsp extra virgin olive oil
1 tbsp grated ginger
2 garlic cloves, grated
3 spring onions, finely sliced
400g minced lamb
1 baby gem lettuce, leaves separated
1 long red chilli, thinly sliced
Juice of 1 lemon
1 tbsp brown sugar
2 tsp fish sauce
4 tbsp hoisin sauce
METHOD
Step 1
Start by placing the lamb mince in a cold pan. Gradually bring it up to medium-high heat, allowing the fat to render out – this should take around 5 minutes.
Step 2
Once the lamb is sizzling and the fat has rendered, add the spring onions, chilli, hoisin sauce, lemon juice, fish sauce, garlic, and ginger. Stir everything together, letting the flavours infuse and reduce until the mixture is slightly caramelised. Remove from heat and let it cool briefly to allow the caramel to set around the mince.
Step 3
While the lamb cools, fry the vermicelli noodles in a little oil until crispy, then drain on paper towel.
Step 4
To serve, place a spoonful of the lamb mixture into each lettuce cup, top with crispy vermicelli, and enjoy a burst of spicy, tangy flavours with every bite.
