AVOCADO SUSHI ROLLS


PREP TIME 15 minutes
COOK TIME 20 minutes
SERVES 2

INGREDIENTS

2 avocados, sliced 

1 carrot, cut into matchsticks 

½ cup sushi rice, washed 

1½ cups water 

1½ tbsp pickled ginger, finely chopped 

1 tsp mirin 

1 tsp rice wine vinegar 

2 sheets sushi nori, cut into quarters 

Soy sauce, for serving 

Wasabi, for serving 

METHOD

Step 1 

In a medium saucepan, bring the rice and water to a boil over high heat. Once the water is absorbed and the rice is tender, stir in the mirin and rice wine vinegar for that perfect sushi flavour. 

Step 2 

To assemble, place a small portion of rice in the centre of each nori square. Top with a few carrot matchsticks, a slice or two of avocado, and a pinch of pickled ginger. Roll or fold as desired for a canapé-style serving. 

Serve with soy sauce and wasabi on the side for dipping. Enjoy these fresh, flavourful bites!
