BAKED BEEF TACOS

INGREDIENTS
500g beef mince
1 jalapeño, deseeded and finely diced
1 packet taco spice mix
1 tin red kidney beans
2 roasted whole capsicums, diced
¾ cup water
2 cups grated Ashgrove smoked cheddar
1 packet soft shell tacos
¾ cup tomato passata
Sour cream
Coriander, to garnish
METHOD
Step 1
Heat a medium-sized pan over medium heat. Add the beef mince and break it up as it cooks. Once browned, add the red kidney beans, diced capsicum, and jalapeño. Stir well.
Mix in the taco seasoning and pour in the water. Cook until the water reduces and the mixture thickens.
Step 2
Spoon the beef mixture into the taco shells and arrange them upright in a baking dish.
Spoon a little tomato passata over each taco and sprinkle with grated cheddar.
Bake in a preheated oven at 200°C for 10-12 minutes, or until the cheese is melted and golden.
Step 3
To serve, plate up three tacos per serving. Add a dollop of sour cream on top and garnish with fresh coriander.
