HAM WALDORF SALAD


PREP TIME 15 minutes
COOK TIME 15-20 minutes
SERVES 4

INGREDIENTS

2 Granny Smith apples, thinly sliced

2 Red Delicious apples, thinly sliced

2 celery stalks, thinly sliced

1 tbsp lemon juice

5 potatoes

150g spinach, finely shredded

½ cup chopped walnuts

½ cup honey vinaigrette

50g Tamar Valley Truffles Persian feta

200g thinly shaved ham

METHOD

Step 1 

Boil the potatoes in a pot of water until tender. Once cooked, peel off the skins and chop the potatoes into small pieces. Let them cool for about 3 minutes.

Step 2

Dress the potatoes with half of the honey vinaigrette separately.

In a large bowl, combine the apples, walnuts, celery, spinach, and the dressed potatoes. Add the remaining vinaigrette and toss together with a splash of lemon juice.

Step 3

To serve, transfer the salad into a large serving bowl. Arrange the shaved ham on top and sprinkle with the Persian feta.
