BEER BATTERED FISH

Ingredients

1 cup SR flour plus extra for dusting

1/4 cup corn flour

2 tsp baking powder

Pinch salt

1 cup beer

4 medium fillets of pink ling

500ml frying oil

 

 

Method:

Add SR flour, cornflour, baking powder, salt and beer to a bowl and stir to a pancake batter consistency

Cut your fish to desired serving size. Dust fish with flour

In a wok heat the frying oil. Oil is ready when you drop a pinch of flour into the oil and it bubbles

When ready to cook coat the floured fish in the batter and put straight into the hot oil. Do not over-crowd the wok, cook the fish in batches.

Turn fish if it is not completely coated with oil. Cook until golden - approximately 6 minutes

Remove from oil onto paper towel and sprinkle with sea salt.
