DUCK FAT POTATOES

Ingredients

4 large starchy potatoes peeled and cut into large cubes

1/2 cup duck-fat

3 tbs chopped rosemary

 

Method:

Add potatoes to a large pot with cold salted water and turn on high heat and bring to the boil, cook until just soft - approximately 25 mins

Pre-heat oven to 190 degrees celsius

When soft, remove from heat and strain water off, allow steam to dissipate for 5 mins. Then return potatoes to the dry pot, add a generous pinch of salt and shake to rough-up the outside of the potatoes

To a baking tray add potatoes and duck fat and another good pinch of salt and put in hot oven. After about 5 minutes when the duck fat has completely melted remove from oven and move potatoes around so they are completely coated.

After about 25 minutes remove from oven and add rosemary. Move potatoes around again to turn them over and return to oven and bake until golden and crispy.
